Winter purslane

Miner’s Lettuce (Claytona Perfoliata) is also called Winter Purslane, Indian Lettuce, Spring Beauty and Miner’s Green, which are all names that reveal a bit about this amazing and succulent wild green superfood.

NUTRITION:
High in vitamin C, beta carotene and protein. Some of the health benefits of purslane include its ability to help lose weight, boost heart health, help in the proper development of children , treat certain gastrointestinal diseases, prevent certain cancers and increase circulation.

LEBANESE WINTER PURSLANE SALAD “FATTOUSH”

INGREDIENTS
1 head of curly lettuce
1 cup winter purslane
1 large or 2 small cucumbers
2 large tomatoes
4 spring onions
1/2 red pepper
3 small radishes (optional)
1/4 cup flat-leaf parsley
1/4 cup chopped fresh mint
2 pita breads, split, toasted or fried
DRESSING
1/4 cup olive oil
juice from 2 lemons
1 tbsp pomegranate molasses
2 tsp sumac
2 cloves garlic, minced
salt and black pepper to taste
PREPARATION
Chop the lettuce, tomatoes, peppers and onions then combine all salad ingredients except the bread into a large bowl. When you’re ready to serve, whisk the dressing ingredients together and toss the salad. Tear the fried pitta and serve warm.
